Carrots
Carrots are a sweet tasting root vegetable that are delicious in everything from baked goods to savory stews. They’re probably most popular when enjoyed in their raw state as a mid day snack (hello carrots and peanut butter!) but I particularly love them when they are slightly cooked. Their natural sugars are released and they become tender and oh-so sweet! You can toss these puppies onto the grill (just make sure to slice them thinly and generously brush them with oil) or gate them up and add them to muffins, salads or even quick breads. Carrots are available year-round but are particularly delicious in the late fall after they’ve undergone a hard frost.
