Leeks
Leeks are one of my favorite type of onions to cook with. Leeks, along with shallots, scallions, ramps, sweet onions and storage onions are all alliums, an offshoot of the lily family. Honestly, onions are one of my favorite things we grow here at Tumbleweed Farm. Pretty much every good dish starts with an onion and leeks just so happen to be one of the best!
Leeks in particular have a wonderful flavor that is quite mild which makes them lovely to pair with simple veggies in the spring like asparagus and peas, and heartier veggies in the fall like winter squash and potatoes. One of my favorite ways to showcase this delicious onion is to make it the star of the show and grill the whole stalk on the bbq and serve it with a simple vinaigrette or herbed butter. Doesn’t get much better than that!
