Asparagus

Asparagus is a perennial plant that is one of the first vegetables available in the early spring. When eaten fresh it has a mild flavor with earthy undertones. It’s great grilled, roasted, pickled, shaved thinly and tossed with a little olive oil and lemon juice or simply eat raw and dipped into hummus. You really can’t go wrong!
