Garlic Scapes
Garlic Scapes are treated like a delicacy around these parts! They are the flower bud of the garlic plant (hard neck varieties that is) and have a mellow garlic flavor. They are snipped off in early spring to encourage the garlic plant to use its energy to grow larger bulbs. You can substitute garlic scapes for garlic cloves in any recipe and the best part is….no peeling required! Can’t beat that!
