Simple Roasted Beets & Garlic Scapes
I almost didn’t post this recipe because it’s so darn basic. But honestly, sometimes I think it’s easy to forget how to prepare food in it’s most simple form. We get asked a lot from farmers market customers and CSA members what the heck to do with garlic scapes and I always tell folks “throw them on the grill or in a roasting pan with whatever else you’re cooking!” They are absolutely divine and this recipe is a great way to serve them along with some garden beets and flakey sea salt. We ate this simple roasted veggie plate with a side of lentils and roasted chicken thighs. It was a great simple meal and I hope you all are inspired to keep it as basic as that! I tend to overcomplicate recipes sometimes and while I love being adventurous in the kitchen, sometimes it’s great to take a step back and let the veggies shine without much else going on.

Simple Roasted Beets & Garlic Scapes
Prep Time: 5 minutes Cook Time: 40 minutes Serves: 4-6 as a side
- 1 bunch of beets, greens removed and saved for another use
- 1 bunch of galric scapes
- 3 tablespoons olive oil
- 2 teaspoons red wine vinegar
- 2 teaspoons dried thyme
- flakey sea salt
Preparation
- Preheat the oven to 400F
- Slice the beets into 1 inch wedges and place them on a baking sheet. Add the garlic scapes to the sheet and drizzle everything with the olive oil and red wine vinegar. Sprinkle with the thyme and a hefty pinch of flakey sea salt. Toss everything together until well coated and place in the oven. Roast until the beets are tender and the garlic scapes are lightly charred. About 35-40 minutes. Toss the veggies halfway through cooking.

I made this dish this week and I was shocked at how delicious it was! Roasted garlic scapes are my new favorite thing, and I’m sad that their season here is over. This was such a winner!
I haven’t seen garlic scapes at my grocery, I will ask and try a different store. I like the roasted beet idea, so simple, don’t know why I did not think about it. I am going to put them in my Canadian Thanksgiving salad.
