There’s whiskey in the jar!
What do two overly tired farmers with sore throats do before bedtime? We drink organic hot apple cider with whiskey to kill the pain!
This week at the farm has been glorious! However, isn’t it ironic that I have been dreaming of cooler weather for months now and when I finally get my wish, I get sick! Both Taylor and I are fighting off something, and tonight when we got home from work, we decided we needed to make ourselves feel better. Cough syrup did not come to mind, whiskey however, sounded like a good idea! But before drinking our medicine I got to work in the kitchen. Easy and quick was my main goal tonight. I did a quick harvest before leaving work. The following will be short and sweet.
Broccoli? Check
Celery? Check
Onion? Check
I left the farm with my list complete, everything else for this easy salad we had leftover at home. I made a variation of the bacon and broccoli salad from a couple of weeks ago. The only difference is that I added chicken, celery, and a side of whiskey apple cider!
Recipe:
5 slices of thick cut bacon (chopped into about 1 inch pieces)
About 5 cups of broccoli florets
1 stock of celery
1/3 cup minced red onion
2/3 cup mayonnaise
2 tbs cider vinegar
1/4 cup honey
1/4 cup raisins
2 tbs of sunflower seeds
2 cups boiled chicken cut into 1 inch cubes
I first whisked together the mayonnaise, honey, and apple cider vinegar. Then set it aside.
Then I cooked up 2 chicken breasts in 1 cup of chicken broth. I brought to a boil and let simmer for about 20 minutes. Or until cooked through
Then I mixed the broccoli florets, celery, onion, raisins, sunflower seeds, bacon and chicken. Tossed together with the dressing. It was a nice easy meal for two sick farmers!
Bellies full, throats numb, alarm clock set for 5:30 a.m.
Maybe you both have an allergy? Try a little Claritin and see what happens. You should probably skip the whiskey with the antihistamine! Love the recipes—they fit beautifully with the farmers market harvests we’re getting.
