Cauliflower
Cauliflower is a close cousin to broccoli. It’s grown similarly and takes quite a while to come to maturity. Although cauliflower is available year round, it’s tastiest in the spring and fall. And while the white head is most common cauliflower comes in varieties with vivid colors–purple, orange and lime green. Cauliflower has a sweet/nutty flavor and crisp texture. It’s great raw, roasted, steamed, and even grilled! However, my favorite way to prepare cauliflower is in a bowl of creamy soup. Seriously, there is nothing we crave more on a chilly night at the farm than a bowl of cauliflower soup and a glass of wine.
