Spinach & Almond Smoothie

Spinach season isn’t going to be around for much longer and we are trying our best to eat it at least three times a day. If we start turning green you’ll know why! Honestly though, Tumbleweed Farm  grows some pretty amazing spinach and simple salads and smoothies have never tasted so damn good. I can’t get enough!

I tend to get carried away with my morning smoothies by adding all kinds of extra things like oats, chia seeds, flax oil, maca powder and cocoa. Don’t get me wrong, I love those smoothies too, however, this green drink is so gosh darn simple and delicious that it’s reminded me to simplify my morning shakes.

Spinach & Almond Smoothie

Prep Time: 5 minutes    Cook Time: 0 mins.    Serves: 2

  • 1 large frozen banana
  • 1 1/2 cups fresh spinach
  • 2-3 large medjool dates, pitted and chopped (if you don't have a high speed blender I would recommend soaking the dates for 30 minutes prior or subbing pure maple syrup)
  • 2 Tablespoon almond butter
  • 1 1/2 cups homemade almond milk (store-bought is fine too)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Preparation

  1. Place all of the ingredients into a high speed blender and whirl away until smooth.

  2. I’m sorry you had a meltdown but sometimes you just gotta let it out, mama! I’m glad that you were able to fight some of that stress with this delicious spinach smoothie though. I love adding dates to smoothies too, so good!!

      Totally agree with Sarah. Heck yes, you’ve got to melt down from time to time, especially when you have so much going on PLUS your FT job involves being up and active all day long. If I were doing everything you are, I’d probably meltdown on the daily. The smoothie looks lovely – you are the queen of smoothies as far as I’m concerned!!

  3. How cute is Henry with that radish?! I love that this smoothie looks chocolaty, but gets the color from all that spinach. Simple is best!

  4. I love that Henry loves his veggies! I have been trying to get my dog to eat more veg, but have so far only had luck with carrots. Will keep persisting though 😉
    This smoothie sounds delicious in its simplicity – you’re right, sometimes simple is definitely the best. And sorry to hear about the meltdown – hopefully all your hard work is paying off and you’ll be able to take some much needed time out soon.
