Shaved Brussels Sprouts Salad

Prep Time: 15 minutes    Cook Time: 0 minutes    Serves: 4-6 as a side

  • 4 cups shaved Brussels sprouts (this works great to shave/shred them in a food processor or on a mandoline)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/2 cup roasted hazelnuts, chopped
  • 1/2 cup freshly grated parmesan cheese
  • 1/3 cup dried cherries
  • 1/3 cup diced dill

Preparation

  1. Add the shaved Brussels sprouts to a large bowl.
  2. In a mason jar shake together the olive oil, lemon juice, honey, dijon and salt. Drizzle over the Brussels sprouts. Add the hazelnuts, cheese, cherries and dill. Toss well.

Notes

This salad keeps well for up to 4 days in the fridge.
