Grilled Radishes with Radish Greens Chimichurri
As the days continue to get longer and our list of farm chores increases we are finding ourselves craving simple meals that can be prepared over an open flame on the back deck. Taylor and I often eat dinner while we’re still covered head to toe in dirt and hose ourselves (and our dinner dishes) off outside before heading into the house for the night. Even if the days are overwhelmingly stressful there is something really special about kicking off our work boots, cracking open a beer, lighting the grill and taking a few moments to just “be.” What I love about this time of the year (aside from the never ending list of things that need to get done) is that mealtime is so darn easy and delicious that it almost feels like we’re cheating when we sit down to eat. How can a meal that takes less than 20 minutes to prepare be so good? We enjoyed these grilled radishes and radish greens chimichurri with some steaks from our favorite rancher. Dinner was not only a home-run, but one of the best we’ve had this season! Simple ingredients, an outdated bbq, and good company go a long way. I’ll post the steak recipe later this week (it’s a winner!) but for today I wanted to share this simple radish dish. Our CSA members are receiving radishes in their week 4 Tumbleweed Farm box and I not only wanted to highlight the radishes themselves, but I wanted to give some love to their amazing greens too. Radish greens are wonderful and make an exceptional chimichurri sauce that livens up anything from grilled veggies to meat or even pasta. This is a great recipe to turn to if you’re receiving an abundance of radishes in your CSA haul or are just curious about new ways to prepare them this season. Grilled Radishes with Radish Greens Chimichurri
Prep Time: 10 minutes Cook Time: 5-8 minutes Serves: 4
Chimichurri Sauce- 3/4 cup radish greens, roughly chopped
- 1/2 cup parsley, roughly chopped
- 1/2 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 2 garlic scapes, chopped (or 2 cloves of garlic)
- 3/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 bunch of radishes, greens removed (see above)
- olive oil
- salt and pepper
Preparation
- Preheat an outdoor grill to medium high. Oil the grates and let the grill heat up.
- Prepare the chimichurri sauce by combining all the ingredients in a food processor and processing until smooth. Taste for seasonings and adjust as needed.
- Slice the radishes in half and toss with some olive oil, salt and pepper. Place the radishes cut side down on the preheated grill, close the lid and grill until charred and crisp tender, about 3-5 minutes, flip and grill for about 2-3 minutes longer.
- Serve the radishes with the chimichurri sauce and enjoy.
