Baked Halibut with Roasted Tomato & Corn Salsa & Creamy Cilantro Sauce
With corn and tomato season in full swing I’m back with another easy and delicious recipe highlighting my favorite summer veggies. And who doesn’t love a simple baked halibut recipe? This meal comes together rather quickly after you prep your ingredients. It’s flavorful and one of those meals that I hope you come back to year after year as the late summer season bounty is abundant.
The creamy cilantro sauce is so good it’s almost drinkable. You’ll find many uses for it after you make this. And the corn and tomato salsa would be great with any grilled meat or served with chips and salsa. Have fun with it!

Baked Halibut with Roasted Corn & Tomato Salsa & Creamy Cilantro Sauce
Prep Time: 25 minutes Cook Time: 20 minutes Serves: 4
Creamy Cilantro Sauce- 1 cup whole milk Greek yogurt
- 2 Tablespoons extra virgin olive oil
- 3 Tablespoons lime juice
- 1 cup fresh cilantro leaves
- 1 large clove of garlic, chopped
- 1 teaspoon unrefined salt
- 2 teaspoons pure maple syrup
- 1 pint cherry tomatoes, sliced in half
- 1 clove of garlic minced
- 1 jalapeño pepper, seeded and minced
- 1/2 of a small red onion, diced
- 1 1/2 cups fresh corn kernels, from about 2 ears of fresh sweet corn
- fat pinch of salt
- 1 Tablespoon olive oil
- 2 pounds halibut
- olive oil
- salt and pepper
Preparation
- Preheat the oven to 375F.
- Prepare the dressing by placing all the ingredients into a food processor or blender and blending on high until smooth. Taste for seasonings and adjust if needed.
- In a large bowl combine all the salsa ingredients. Keep to the side.
- On a baking sheet spread the salsa out and place in the oven for about 7 minutes. While the salsa roasts drizzle the halibut with olive oil and sprinkle with salt and pepper. Remove the veggies from the oven and nestle the halibut on the pan. Spoon some of the salsa over the cod pieces and place back in the oven. Bake until the halibut is just cooked through, about 12-15 minutes for medium-rare.
- Serve with the sauce drizzled over the cod and veggies.
