If you are feeling like me, this week is all about eating light healthy meals to get back on the health kick wagon. Besides, there are plenty of holiday parties coming up and I want to feel good about indulging.  Thank god for almond amazeballs!

These guys taste like cookie dough.  But the truth is they are totally healthy and jam-packed with vital nutrients to keep you going from one holiday party to the next.  I am already anticipating how handy these will be come farm season.  I love quick, easy, healthy snacks and these fit the bill.

I think these puppies taste best with a cup of black coffee.  And hey, if you are feeling ambitious like me put your elastic waistband pants to good use.  I’m hitting up a yoga class this afternoon. I think these guys will taste extra good after an hour of downward dog.

Almond amazeballs: The measurements are an approximation.  Taste test as you go and feel free to swap out ingredients.  It’s just a method so go wild. I just added a tbs of coconut oil to the recipe (which I did not need) but if the mixture is too dry this should help! Enjoy.  We love these!

1 cup raw almonds

1 cup dates, pitted

1/4 cup ground flax

1/4 cup unsweetened shredded coconut

1/4 cup mixed seeds (sunflower, pumpkin ect.)

1/4 cup almond butter

1/2 cup oats (you may need a bit more, just add if you need to)

1 tsp ground cinnamon

1 tbs coconut oil

pinch of sea salt

In a bowl combine the seeds and oats. Set aside.

Place the almonds in a food processor.  Process until finely chopped.  Add dates, shredded coconut, almond butter, coconut oil, flax, salt, and cinnamon. Process until slightly smooth but still a little chunky.

Add mixture to bowl of oats and seeds.  Mix well.  Form into balls and refrigerate for at least 45 minutes before enjoying. They will keep in the fridge for a week or so.

    Just made these! The batter was super dry in the food processor so I added just a touch of apple juice and that did the trick to get everything moving. These remind me of no bake cookies I used to make in my farmer days (our outside kitchen had no oven), while combining them with the date rolls I love and miss from my old coop bulk bins in the US. I had to do a little subbing since almond butter is absurdly expensive here in Germany, but peanut butter worked great. 🙂 Thanks!!

      So glad you made these!! I’m glad you found a solution for the dry batter! My almonds and nut butter were supper oily so maybe that’s why my mixture wasn’t dry. Let me know if you try anything else!!

  6. I made these last night without the coconut flakes and we really enjoyed them. I liked the crunch the seeds provided. I wanted to point out that you omitted the coconut oil in the directions. I noticed it was missing once ingredients were in bowl with oatmeal and seeds, but it probably would have been better to add it in the food processor.

    Would they still be okay if I left out the dates? And maybe added a few mini chocolate chips for the ones my kids will eat?

      The dates hold these together so I would not recommend leaving them out.
