What To Eat….

Why don’t we stuff everything into a giant pepper and call it a night.  Easy enough.  When you are not in the mood to do much cooking or are feeling very uninspired do what I do.  Combine all your favorite foods and stuff them into other vegetables.  This way you are guaranteed a delicious meal because there won’t be any surprises.  Trust me, every time I do this I am never disappointed.  And tonight was another success.  Thanks to my farm friend Christina for eating leftover stuffed peppers today because that gave me the inspiration for this meal.

What you will need:  A giant pepper or two (any variety you like, bell, sweet, or hot) I chose a pablano pepper.

Look in your pantry/refrigerator and combine everything you love. For me this included a roasted sweet potato, pinto beans, rice, goat cheese, and 1/2 of a jalapeno pepper.

Cut the tops off your peppers and remove all the seeds.   Stuff all your fixings into your pepper and bake in the over for about 20 minutes at 400 degrees.

The sweet potato was a great touch to this recipe.  This was my first time eating one from the Farm.  We harvested them on Friday and I had a minor incident with a field rat while digging for these puppies. Coincidently, I have not had a carving since.  Thankfully, after tasting how awesome our sweet potatoes are I am moving forward.
