sweet potato pancakes baby!

Boy oh boy did we love tonight’s dinner.  It hit the spot and we were excited about this new recipe I made up.  Sweet potato pancakes anyone?  Yes, that should be your answer!  These puppies were so easy, fun, and tasty.  We are still basking in sweet potato glory!

What you will need to do is follow this recipe from my zucchini pancakes and substitute sweet potatoes.  I added 2 tsp of paprika, 1 tsp of cumin, and a dash of hot pepper flakes to the batter.  Plus salt and pepper to taste.  Amazing everyone!  Amazing!  Plus I made a nice sour creme “sauce” to top everything off with.  I used 1/3 cup of sour creme and mixed in a tbs of fresh lime juice, minced garlic, cumin and lime zest.  Delicious.  I am patting myself on the shoulder right now.

While I was cooking dinner Taylor got busy making us our first Christmas cocktail of the season.  I know it’s Sunday night, but eggnog was calling our names and we had to indulge.

We drank these while listening to Christmas music and getting ready for dinner.  They were awesome.

We enjoyed our sweet potato pancakes with a side of roasted brussels sprouts.  The perfect Sunday night dinner.  Cheers.
