Radish Salsa
I don’t know about you, but salsa is one of my absolute favorite condiments. I add salsa to everything from tacos, to eggs, to burrito bowls, rice, and everything in-between. And as we anxiously await our tomatoes to ripen (they’re SO CLOSE!) I decided to take matters into my own hands and create a delicious salsa using what’s available right now at our farm. This radish salsa is absolutely divine. It feels sophisticated yet accessible. We enjoyed this with chips one night for a snack and top our fish tacos the next night with it (I highly recommend making fish tacos when whipping up a batch of this radish salsa!)
If you aren’t the biggest radish fan don’t fret, the lime juice, red onion and cilantro really mellow out the radishes and the touch of honey adds a tiny amount of sweetness that makes this all come together beautifully.
Let me know if you give this a whirl.
