Korean Beef Bowls

I went out to dinner a few weeks ago and ordered the Korean Beef Bowl. It was so good and I knew I wanted to create a version using local ingredients from our farm and our neighboring rancher. I will not pretend that this is the most authentic version of a Korean beef bowl, but the flavors are inspired by this popular dish and I think this version is worth a try!  This meal is so easy to prepare (it’s on your table in 20 minutes!) and is chock full of nourishing ingredients like grass-fed beef, ginger, garlic, carrots and cucumbers.

I hope this meal graces your table on a busy night when you didn’t think you’d be able to pull of a healthy dinner for your family. Trust me–this should be in your back pocket all year long! This was approved by the whole family and I can’t get over how quickly it is to pull together. Enjoy!@

Korean Beef Bowls

Prep Time: 10 minutes    Cook Time: 10 minutes    Serves: 4

  • 1/4 cup low sodium-soy sauce or Tamari (for gluten free)
  • 1 Tablespoon rice vinegar
  • 2 Tablespoons maple syrup
  • 2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper flakes + more to taste
  • 1 Tablespoon grated fresh ginger
  • 2 garlic cloves, minced
  • 3 scallions, minced (white and pale green parts) dark green parts saved for garnish
  • 1 pound ground beef
  • 4 carrots, shredded
  • 2 small cucumbers, thinly sliced
  • sesame seeds for serving
  • Cooked white rice for serving

Preparation

  1. In a mason jar (or using an immersion blender) whisk/blend together the soy sauce, rice vinegar, maple syrup, sesame oil, pepper flakes, ginger, garlic and scallions. Taste for seasonings and adjust as needed.
  2. Heat a large cast iron skillet over medium high heat. Add the ground beef and cook, using a wooden spoon to break up the meat a bit until no longer pink and cooked through, about 5 minutes. Add 3/4  of the sauce and mix well.
  3. Divide the beef between bowls with cooked rice and top with the carrots, cucumber, scallion greens, sesame seeds and drizzle with the remaining sauce.
