Broccoli & Kohlrabi Crunch Salad

This creamy, crunchy, and flavorful salad combines all of my favorite ingredients from a classic broccoli salad but with a fresh twist! Crunchy kohlrabi adds the perfect bite, salty bacon adds flavor, sunflower seeds and raisins make for the perfect salad topper and a creamy Greek yogurt dressings adds the perfect creamy texture. This is going to become my go-to potluck salad for as long as our broccoli keeps cranking at the farm. This is also a great excuse to pick up some kohlrabi from your local farmers market as it’s an essential ingredient in this recipe for its added crunch. If you can’t get your hands on kohlrabi jicama is a great substitute.

Broccoli & Kohlrabi Crunch Salad

Prep Time: 20 minutes    Cook Time: 0 minutes    Serves: 6

  • 1 cup whole milk Greek yogurt
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon pure maple syrup
  • 1/2 teaspoon unrefined salt
  • 1/2 teaspoon garlic powder
  • 5 cups chopped broccoli
  • 1 cup finely chopped/diced kohlrabi (peeled first)
  • 1/2 of a small red onion, diced
  • 1/2 cup sunflower seeds
  • 1/2 cup raisins
  • 4 slices of cooked and chopped bacon

Preparation

  1. In a large bowl combine the yogurt, vinegar, maple syrup, salt and garlic powder. Whisk until smooth. Add the remainder of the ingredients and stir to combine everything. Place in the fridge for at least 2 hours if not overnight to let the flavors meld into the broccoli.
