Cilantro Lime Vinaigrette

This cilantro lime dressing is the perfect summer condiment. It’s fresh and tangy and tastes great drizzled over anything from salad greens to fish tacos, grilled veggies, pizza, coleslaw or really anything you can think of! It’s my new go-to dressing and I hope you all enjoy it as much as I do.

Our CSA members are getting a lot of cilantro in their boxes this week and this is the dressing I’m recommending. It’s reason enough to grow more cilantro because I don’t think I’ll stop making this until November!

Cilantro Lime Vinaigrette

Prep Time: 10 minutes    Cook Time: 0 minutes    Serves: 1 cup

  • 2 cups chopped fresh cilantro
  • 1 clove of garlic, minced
  • 1/4 cup fresh lime juice
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon unrefined salt
  • 1/2 cup extra virgin olive oil

Preparation

  1. In a small food processor add all the ingredients and blend until smooth. Taste for seasonings and adjust. To make this a creamy dressing you can add 1/2 cup plain Greek yogurt or 1/2 of an avocado. Both taste great!
