Herby Potato & Bacon Celery Salad

I love this fresh twist on classic potato salad. It pairs well with pretty much any grilled meat or fish you might be preparing during the summer months but I also love that it is filling enough to be its own meal. Between the protein from the bacon and hard boiled eggs it’s sustaining without weighing you down. The crunch from the celery is spot on and the creamy farm fresh potatoes are cooked to perfection and topped with fresh herbs to make this salad shine.

This salad uses mainly ingredients that are in our CSA boxes for our customers this week but the recipe is forgiving so use what you have on hand! If you don’t have celery Swiss chard stems or chopped kohlrabi would be a great substitute. Not a mayo fan? Just use all yogurt instead (the recipe calls for half yogurt half mayo). Vegetarian? Skip the bacon and top with roasted sunflower seeds. Go wild!

Potato & Bacon Celery Salad

Prep Time: 20 minutes    Cook Time: 20 minutes    Serves: 4

  • 4 slices good quality thick cut bacon
  • 3 pounds potatoes
  • 3 Tablespoons red wine vinegar
  • salt and pepper
  • 1/4 cup mayo (homemade avocado oil is best)
  • 1/2 cup whole milk plain Greek yogurt
  • 3 scallions, minced (white and pale green parts)
  • 2-3 stalks of celery, diced
  • 1 small red onion, diced
  • 1/4 cup minced parsley
  • 1/4 cup minced dill
  • pinch of crushed red pepper flakes
  • hard boiled eggs for serving

Preparation

  1. Cook the bacon in a 400F oven for 20 minutes or until cooked through and lightly crisp. When cool enough to handle chop into fine pieces.
  2. Meanwhile bring a large pot of salted water to a boil. Add the potatoes and cook until fork tender, about 15 minutes. Drain the potatoes and when cool enough to handle cut the potatoes into 1/2-inch pieces. Place the potatoes in a large bowl and toss them with the vinegar, salt and pepper. Add the remaining ingredients including the reserved bacon and toss well. Season to taste with additional salt and pepper and top with hard boiled eggs.
