Quick Pickled Radishes

The only way I can get my kids to eat radishes is to quick pickle them. This recipe is SO easy and is a great one to turn to if you are overloaded with radishes due to a CSA share or farmers market haul. I love having these on hand for topping salads, chili, sandwiches or simply eating straight out of the jar (which is how my kids enjoy them!)

Quick Pickled Radishes

Prep Time: 10 minutes    Cook Time: 0 minutes    Serves: 1 pint

  • 1 bunch of radishes, greens removed and very thinly sliced
  • 1/2 cup apple cider vinegar
  • 1 Tablespoon maple syrup
  • 1 1/2 teaspoons salt
  • 1 cup warm water

Preparation

  1. Place the radishes in a pint jar (or jar of your choice).
  2. In a bowl whisk together the apple cider vinegar, maple syrup, salt and warm water. Whisk well. Pour this mixture over the radishes and place in the fridge. Store for up to 3 weeks.

Notes

Store in the fridge for 3 weeks
