Dishing Up the Dirt

Chai-Spiced Pumpkin Lassi

We often like to start our days off with a smoothie using summer fruits that we’ve frozen for a simple healthy drink. Here, we’ve drawn inspiration from the classic Indian yogurt drink (lassi) substituting pumpkin for mangoes and because we’re feeling like warming spices since it’s officially fall, I simply added a spoonful of dried chai tea leaves. I love that the tea adds a touch of caffeine and an elusive hint of tannin. This simple drink can be enjoyed any time of the day and will remind you of how comforting sweet pumpkin and spicy chai will make you feel. With the addition of maple syrup and vanilla extract this tasty beverage is a great celebration of the fall harvest. Grab a straw!

Chai-Spiced Pumpkin Lassi

Prep Time: 5 minutes    Cook Time: 0 minutes    Serves: 2

  • 1/2 cup unsweetened pumpkin puree
  • 1 1/2 cups plain unsweetened full fat yogurt (steer clear of a greek style yogurt here, you want a thinner consistency)
  • 2-3 tablespoons pure maple syrup (more to taste if necessary)
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon chai-spiced tea leaves (from1 tea bag)
  • 2-3 ice cubes

  1. Combine all the ingredients into a high speed blender and blend until smooth. Taste for seasonings and adjust as necessary. If the drink is too thick, add a touch of ice cold water to thin until you reach your desired consistency.

Hi, could I use Kefir in place of yogurt?

Sure! As always, use the recipe as a guide and adjust to what you’ve got on hand. I think Kefir will be wonderful. Cheers!
