It may be September 1st, but we still have plenty of these beauties around the farm.

The wonderful thing about having fresh tomatoes at your fingertips is that lunchtime is always a no brainer.

If you have a garden or frequent your local farmers market, I suggest stocking up on a few tomatoes to have during the work week.  We usually fly through our front door at noon starving and this salad never disappoints.

There isn’t even really a recipe. But I will share what we usually do.

Grab a large bunch of fresh arugula.  Throw it through the salad spinner and then put a few handfuls onto plates.  Top your plates with a few slices of fresh tomato, crumbled mozzarella cheese, and a giant dollop of fresh pesto.  Drizzle everything with some olive oil, a little bit of fresh lemon juice, salt and pepper.

That’s it!  You can totally make this your own.  Serve with crusty bread, balsamic vinegar, even a few slices of fried bacon on top.  Go wild!
