Grilled Chicken with Cilantro-Dill Chimichurri
This is the type of meal I could eat every single night of the summer! It’s all about that fresh, zesty, flavor-bomb of a sauce. This is the kind of sauce that you just need in your back pocket for whenever the fresh herbs of the season are coming on strong. It can’t be denied that both cilantro and dill are assertive herbs—and while you’d think that would disqualify them as a pairing, it’s actually what makes them particularly suited for each other. When combined, cilantro takes on a more floral undertone and dill adds a tartness that rises to the top. Together they make for one kick-ass sauce. And fun fact, dill and cilantro are companion plants, and a rule of thumb–companion plants always taste good together!

Grilled Chicken with Cilantro-Dill Chimichurri
Prep Time: 30 minutes Cook Time: 15 minutes Serves: 4
Chicken- 1 1/2 pounds boneless, chicken breasts
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 cloves of garlic or green garlic, sliced
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 cup dill, roughly chopped
- 1/2 cup cilantro, roughly chopped
- 2 garlic scapes, or garlic cloves, chopped
- 3 Tablespoons red wine vinegar
- 1/2 cup extra virgin olive oil
- 3/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
Preparation
- Combine the chicken with the olive oil, vinegar, garlic and spices and marinate for 30 minutes (or even overnight in the fridge).
- Heat an outdoor grill to medium-high heat. Drain the chicken from the marinade and grill for about 5-6 minutes per side or until cooked through (internal temperature 165F). Let the chicken rest for about 10 minutes before slicing.
- Prepare the chimichurri by combining all the ingredients in a food processor or blender and processing until smooth. Taste for seasonings and adjust as needed.
- Serve the chicken with the sauce and enjoy!
