Zucchini for breakfast!

Last night I made zucchini muffins for the first time in my life!  They turned out wonderfully.  I came home this morning from a 5 mile run and dove right in.  The zucchini is of course from the farm, everything else from Crosby’s (the local grocery store that I absolutely hate shopping in. oh well)

Here is the recipe

Ingredients

  • 3 cups grated fresh zucchini
  • 2/3 cup melted unsalted butter
  • 1 1/3 cup sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • Pinch salt
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup walnuts (optional)   mix it all together and bake at 350 for 20 minutes.
  • enjoyed with a cup of Stumptown coffee all the way from Portland.  Thanks mom and dad!

    Don’t forget your Oregon roots…use Bob’s Red Mill flour it’s really great. Muffins are a great way to start the day. They should freeze well if you’re careful to get the air out of the bag. Makes me hungry.
    Good for you trying so many new adventures.
