I did not have a good day.

Apple pruning looked a little something like this:

My spirit just wasn’t in it.

The good news though,  I have a new recipe to share!

This easy little number is in season and takes no time to whip up.

It would be a great snack to bring to a party. But if you are like us, you can make it and just munch on it all day in the comfort of your own home.

Sweet potato hummus.  Delicious!

I even made my own pita chips for dipping.  I guess it was a successful day after all!

Sweet potato hummus recipe.  Inspired by whole living

2 medium sweet potatoes.  Peeled, chopped and boiled.

1 can chickpeas, drained and rinsed

1/4 cup tahini

2 tbs olive oil

juice of one lemon

3 cloves garlic, chopped

1 1/2 tsp cayenne pepper

1/2 tsp paprika

1/4 tsp cumin

Salt to taste

Once your sweet potatoes are cool enough to handle place them in a food processor with all other ingredients.  Pulse until it is smooth and creamy.

Serve with homemade pita chips, veggies, or chips.  Enjoy!
