What on earth is going on over here?

It was almost 60 degrees outside yesterday! Today was in the 50’s.  It’s December for crying out loud!  Normally I wouldn’t complain about nice weather, but this is just weird.

Look no jacket!

I was so warm pruning apple trees I wished I had on short sleeves.

But the good news is that it has been cooling off enough during the evenings that a fire in the wood stove is necessary.

A fire and some wonderful homemade pizza that is.

Butternut squash, bacon and kale pizza.  One of our favorites!

We enjoyed our pizza with a side of farm fresh salad. (It’s so warm outside that the lettuce is still amazing!)

This pizza recipe is really easy.  Here is all you need.

1 pizza dough.  homemade or store-bought is fine

1 cup butternut squash, peeled, cubed, and boiled until cooked through

1/3 cup goat cheese

3 strips fried bacon

1 cup kale, chopped

olive oil

salt, and pepper

Parmesan cheese, grated

Directions:

Spread butternut squash mixture over pizza dough.  Crumble goat cheese and bacon over the top.  Add the kale and parmesan cheese.  Drizzle with olive oil, salt and pepper.  Bake in a 425 degree oven for 10 minutes.  (oven times and temperatures may vary) Enjoy!

And now I want to go to sleep.  I still haven’t adjusted to the time change.  Have a great evening everyone.
