Yesterday morning was the first frost we have had since early spring.
I forgot how cold my fingers can get during early morning harvests. It can be quite painful!
But the great news about the first frost is that it makes us crave warm, hearty veggies. Last night I was inspired by all the root vegetables we picked to make an old favorite.
Harvest Pie.
I love roasted root vegetables more than Henry loves his dog bone.
Or my work boots for that matter!
And when you mix your roasted veggies with cheese, onions, mushrooms and bacon and pile it all in a pie crust, amazing things happen!
Especially when you top your pie with sweet potato puree. My god this is good!

I made two of these last week and didn’t quite follow your recipe. Mine was a little dry. Next time I going down your road without veering off. That being said it was still delicious.
Maybe we can recreate this when I visit.

Love this recipe. Roasted root veggies are my favorite, too, but sometimes I can’t think of enough creative ways to eat them. I will see how many of these veggies I can find here in Spain.
