Dishing Up the Dirt

easy granola bars

February 22, 2012

Guess what I have learned over the past week hanging out with my little nephew?  New moms rarely have a moment to sit down and eat.  Let alone cook!  So I thought to myself, what would I like to have on hand if I didn’t have time to sit down to a proper meal.

Granola bars.

These guys are tasty, easy to make, and you can easily eat them while burping a new baby.

I went out and bought the supplies and got to work.

This recipe is SUPER easy. And look at these beauties.

You don’t have to be a new mom to enjoy these guys.  I recommend making them very soon!

Here is the recipe.

2 1/2 cups quick cooking oats

1 cup dried cranberries

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1 cup peanuts

1/2 cup crushed pecans

One 14 oz can of low fat sweetened condensed milk

Preheat the oven to 250.

Mix together all the ingredients in a large bowl.  Spread a layer into a prepared pan covered in parchment paper.  Bake in the oven for 1 hour.  Cool.  Then cut into squares and enjoy!

Off to do a little more of this!
