It’s been pretty darn hot around here these past few days.

Laying on the grass in the shade is not really as appealing as Henry makes it look.  It’s still muggy and gross out.

Evenings like this make it really hard to turn on the oven.  Luckily, I was prepared and did a little light cooking yesterday morning.

I cooked up some couscous and grilled up some summer squash.  It literally only took 15 minutes to do this.  This evening all I had to do was makes some more pesto . Easy as pie!

We enjoyed a cold couscous salad with pesto, tomatoes, summer squash, red onion, bell pepper, hot pepper flakes, and salt and pepper.

So refreshing when it’s almost 100 degrees outside.

If it’s hot and muggy where you are, whip some of this goodness up!

  1. That looks great! I made grilled chicken salads yesterday with guacamole, corn, onion and bell pepper. They were great! Definitely looking forward to more cold meals this summer, but not the heat…
