After waking up half a dozen times throughout the night to check the greenhouse temperature I was having MAJOR doubts about our life decision to become farmers. Not only are we paranoid about the success of our crops, but the dirt that has made its way from the farm to our bed is driving me crazy. Little bits of dirt are scratching my back at all hours of the night. And yes, we wash our sheets (and shower for that matter). But it’s inevitable. We are covered in dirt 90 percent of the time.
In my sleep deprived state of mind I was thinking that maybe I should start applying for other jobs. (You know, ones that actually bring in an income and don’t require 24 hours a day on the clock). As I was browsing the classifieds on our computer and imagining what I would look like in a pantsuit Taylor stormed through the door with his new belt buckle. This little gem set me straight again. Farming is a good thing!
You want to know what else is a good thing? This coconut curried cauliflower soup. It is creamy, spicy, and warms you from the inside out. Rumor has it, a lot of you are experiencing snowy weather. This soup is your first class ticket to a warm paradise.
Crank the thermostat, make yourself a stiff drink (it doesn’t look like the storms letting up) and find your biggest soup spoon. Coconut Curried Cauliflower Soup is here to rescue you!
Coconut Curried Cauliflower Soup (serves 2-4)
1 TBS coconut oil
1 large head of cauliflower, chopped into small pieces
1 large baking potato, scrubbed and cut into 1 inch pieces
1 large yellow onion, diced
2 cloves of garlic, minced
2 tsp up to 1 TBS curry powder (start with 2 tsp and add more if you like it spicy!)
small dash of cayenne pepper
3 cups of veggie stock (if soup is too thick you can add more at the end)
1 cup of full fat coconut milk
salt and pepper to taste
Heat a large soup pan over medium heat. Add the coconut oil. Heat through for about 1 minute. Add the onion and saute’ for about 8 minutes stirring occasionally. Add the garlic and cook for about 1 more minute.
Add the cauliflower, potato, curry and cayenne. Cook for about 1 minute stirring constantly. Add veggie stock. Bring to a light boil and then reduce heat to a simmer. Simmer for about 25 minutes.
With an immersion blender (or regular blender) puree the soup. Add coconut milk salt and pepper to taste and stir to combine.
Taste test and season more if necessary. Enjoy!

I think it’s totally natural to doubt your decision but remember how gratifying it’s going to be come spring and summer when you have adorable veggies!! You won’t even care about the dirt anymore lol. And this soup! Love curry, love cauliflower – LOVE THIS.

I love curry! I don’t cook with it often enough and every time I see a new curry recipe, I swear I’m going to make it and never get around to it! This, however, looks TOO good to push aside. I love cauliflower soup too. This is a must make! 🙂

I imagine the dirt is like sand, no matter how much you shower or wash off, inevitably some gets in your sheets, ugh! I bet it’s worth it though, farming has to be so rewarding. The soup looks awesome too, perfect for a cold winter day.

G’Day from the land down under. I stumbled upon your web site as I was googling a recipe for a curried cauliflower soup. After screening a few recipes your recipe caught my attention. Anything that has coconut milk in it I’m drawn to. So after breakfast I got straight to the kitchen & started making your recipe. I’m a crock pot user, we are in our first month of winter & my crock pot gets a work out. I decided to cook your recipe using my crock pot. I simply chopped the onion, garlic, cauli & potato, I first pour some home made chicken stock in the base of my crock pot, added a heaped tablespoon of mild curry powder. I find when cooking in crock pots a tablespoon of curry powder is necessary, anything less doesn’t seem to cut it. I swirled the curry powder & stock together, then added the chopped veggies, then 6 cups of home made chicken stock, (if you would like the recipe I can send it to you). I put the lid on, set it on high for 4 hours or 8 hours on low if time permits. Then at the end I’ll add the coconut milk & season to taste. I’ll be looking forward to this healthy soup tonight for dinner, mmmm. Thank you so much Andrea for your recipe, I’ve looked over your other recipes & the smoothie recipes, which I’m a smoothie junkie, so looking forward to making them. When you look the web site up, in the recipe it says to use giblets, which I didn’t, I also didnt use the apple cider vinegar & I added a large carrot chopped.
I love Australia, so pleased you were able to come visit, I am hoping to come to America, this is one country I’ve yet to discover. I love the photo’s of where you live, those snow capped mountains are awesome! I love your dog to! I support our local farmers market near to where I live, I’m so thankful they make the effort to travel far distances to bring their fresh produce to us. I bought myself a trolley & it’s so cool loading it up with veggies, eggs, bread, macadamia nuts & seedlings.
