Spinach & Green Garlic Chicken Patties with Garlic-Mayo

These healthy spring inspired chicken patties come together in less than 20 minutes for a delicious, high protein meal. We have been craving fresh, lighter food for the past few weeks and our farm is finally producing! These chicken patties are a welcome change after all of the heavy, cozy winter meals that served us well for the past 4 months. Now with the warmer spring weather and local produce popping up, food like this really reminds me that eating with the seasons is what our bodies need to thrive.

These patties would taste great served like a traditional hamburger in-between a good quality bun. However, we loved them served open-faced with some garlicky mayo on a bed of fresh arugula. There’s really no wrong way to enjoy them!

 

Spinach & Green Garlic Chicken Patties

Prep Time: 10 minutes    Cook Time: 10 minutes    Serves: 4-6

  • 1 cup loosely packed spinach, diced (a food processor works well but good old-fashioned dicing with a sharp knife does the job!)
  • 2 stalks green garlic, diced (or two cloves of garlic)
  • 1 pound ground chicken
  • 3/4 teaspoon unrefined salt
  • 1/4 cup almond flour
  • Ghee or oil for frying
Garlic Mayo
  • 1 stalk green garlic, minced (or 1 clove of garlic)
  • 1 cup home-made mayo or store-bought

Preparation

  1. Combine all the ingredients for the patties in a large bowl. Use your hands to form the mixture into 6 small patties. This mixture is pretty wet so if need be, wet your hands or place the mixture in the freezer for a few minutes.
  2. Heat a little ghee in a large cast iron skillet over medium-high heat. Add the patties and cook for about 4-6 minutes per side or until cooked through.
  3. Mix the garlic with the mayo. Serve with the chicken patties and enjoy!
