While Taylor was busy pruning apple trees in 20 degree weather, I was busy making new produce signs in my 70 degree living room. I was extremely lucky to have this job. I think my life depended on it. (I don’t do well in 20 degree weather. Especially when there are ladders and trees to climb!)
Since Taylor was the one who worked hard all day, I thought I would surprise him with his favorite meal. Pizza. But not just any pizza, how about a puff pastry pizza? Yes, who doesn’t like puff pastry? After all, I am a quarter French and puff pastry runs in my blood. Thanks Herve! However, puff pastry doesn’t run far enough through my blood to make it from scratch. Enter Pepperidge Farm:
Tonight, I made a pizza dish that would make an awesome appetizer for a holiday party. This was so easy and a dish everyone will love.
Here is what I did:
1 sheet of Pepperidge Farm puff pastry dough
a handful of blue cheese (whatever you feel necessary)
1 shallot minced
4 bacon slices (fried)
Honey (a tbs or so)
1/2 of an apple (diced)
A sprinkle of mozzarella cheese
First flatten out your puff pastry dough. I flattened mine out on a lightly floured surface. I made a rectangle and folded over the edges about 1/2 inch. Then imprinted the edges with a fork. I also pressed my fork through the middle of the dough so it wouldn’t rise so much.
I brushed the edges of the dough with water.
Then I fried up my bacon. Once it was cooked I removed it and added the diced shallot to the bacon fat. I added about 1 tbs of honey to the pan.
Anything cooked in bacon fat is guaranteed to turn out well!
Once my shallots were done cooking I poured the mixture over the pizza crust. Then I added about a handful of mozzarella cheese. I added the bacon (which I had torn into bite size pieces) some mozzarella cheese, 1/2 of a chopped gala apple, a drizzle of honey, and them some blue cheese crumbles. Yummmmm!!!
Pop it into a 400 degree oven and cook for 20 minutes.
This was BETTER than pizza. The puff pasty took us on a whole new ride! Try puff pastry, it makes your dreams come true!

He doesn’t miss a beat! And he can smell bacon from a mile away!

Another great idea for dinner tonight! Henry is such a good helper! He wants you to get it right! or….drop it on the floor. ☺
Both Henry and I think that pizza looks terrific and I can’t even smell the bacon.
Your signs reminded me to ask if there is any possibility of adding thyme to Hutchins’ herbs next year?
