This is how we cool off around here:
It has been so hot lately that Taylor, Henry and I have been spending our evenings at a local pond just to cool off. The pond has saved us this year! I think this summer has been hotter than the past two summers combined.
We usually go straight from the farm to the pond and swim for a while. It helps ease the aches and pains from the day along with getting our appetites ready for dinner.
Tonight we were craving pizza. And since we have loads of sweet corn, basil, garlic, tomatoes, and summer squash I thought a lovely summer vegetable pizza was in order. Man this was good!
We haven’t had pizza in ages. We decided to celebrate the occasion with a couple of beers and a picnic dinner. It was the perfect evening. The only thing missing was a second pizza. We loved this so much we ready to eat a whole other pie!
For the pizza:
1 ball of pizza dough. homemade or store-bought.
1/2 cup of homemade pesto, Recipe here (although I used real garlic instead of scapes this time.)
1 ear of sweet corn, kernels chopped off
1 summer squash, sliced into 1/4 inch rounds
about 1 cup of cherry tomatoes, sliced in half
a large handful of mozzarella cheese
salt and pepper to taste
Preheat oven to 400.
Spread pesto over dough. Add summer squash, corn, and tomatoes. Sprinkle with cheese. Place in the oven for about 12-15 minutes or until dough is slightly crisp and brown. Enjoy!
omg lucky you to have a pond to swim in! my life would be complete if I had one. I grew up swimming in a spring fed pond that was always cold, and if that didn’t work, Lake Michigan was only about 30 minutes away. I miss that cold water sooo much!
