This post is going to be short. I have a lot of stories I would love to share with you all from the last few days up at the farm. However, tonight my brain is shot. My fingernails are still currently filled with dirt (my keyboard can attest to that!) My hair is in knots, and the sunburn on my shoulders could use some aloe vera STAT!

I know I am not alone. Many of you probably feel the same way. It’s only Tuesday and the workweek has just begun. Deep breaths!

My two dates for the evening pooped out pretty early. Too much sun and dirt can really take it out of a couple of guys!

At least they are resting peacefully with bellies full of healthy pasta!

This recipe is very simple, but don’t let that fool you. This was the BEST pasta dish we have made in ages. lemon dill2

Lemon-Dill Pasta with Green Beans and Parmesan

Prep Time: 5 min    Cook Time: 15 min    Serves: 4

  • 12 ounces pasta noodles (any type your prefer)
  • 3/4 lb of fresh green beans, trimmed and cut in half
  • 2 TBS dijon mustard
  • 1-2 cloves of garlic, minced
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh dill, minced
  • 1/4 cup parmesan cheese, grated
  • salt and pepper

Preparation

  1. Cook pasta
  2. Whisk together lemon juice, olive oil, dijon mustard, and garlic. Season to taste with salt and pepper. Set aside.
  3. When the pasta only has about 1 minute left to cook add green beans. Cook fro remaining 1 minute. Drain the beans and pasta.
  4. In a large bowl combine the pasta, green beans and dressing. Add dill and toss until well combined. Season with parmesan cheese, salt and pepper. Enjoy!

  3. This sounds awesome! Last time we grew green beans, I had an entire row of them and I pickled, canned and froze them. Not once did I make pasta! Awesome!

  4. When I saw the title I thought how I like dill and hardly ever use it. After that I tought how great you paired it with lemon. Pasta, herbs and lemon, it´s way better than it appears to be. Enjoy the long summer days, even if they`re tiring! And this gorgeous plate of pasta!

    I found this recipe today while searching for a way to use fresh dill that didn’t involve salmon! I didn’t have green beans so I substituted spinach and it was delicious! The sauce was so simple and I had dinner on the table in under 20 minutes. And, it was so delicious that there are no leftovers!
