black bean and corn fritters with cilantro-lime yogurt sauce
I needed to make this recipe before our corn was completely done for the season. As I type this post Taylor is plowing the corn field down. I guess summer really is coming to an end.
Henry enjoyed the corn almost as much as we did. I guess now we will all have to wait until next year before we enjoy one of my favorite summertime treats.
As sad as I am that summertime is coming to an end, I must admit that I am thrilled to put the farm to sleep for the winter. We will hopefully get to hang out with our friends more, catch up on some much needed sleep, and drink plenty of pumpkin beer. (Yes, I am a pumpkin beer lover!)
With only a few days left of summer please do yourself a favor and makes these fritters. They are a cinch to make and really are a lovely appetizer or a complete meal if you serve them with a side salad (which we did). Pour some wine, sit outside if the weather is still nice enough, and enjoy this simple meal.
Black Bean And Corn Fritters With Cilantro-Lime Yogurt Sauce
Prep Time: 15 mins. Cook Time: 15 mins. Serves: 4-6
- 1 ear of fresh corn (or 1 cup of frozen corn, thawed)
- 1 15 oz can of organic black beans, drained and rinsed
- 1 jalapeño Pepper, seeded and diced
- 1/2 of a red onion, diced
- 1/2 cup fresh cilantro, diced
- 1/2 cup all purpose flour
- 1/3 cup panko bread crumbs plus a few tablespoons for frying
- 1 egg, lightly beaten
- a high heat neutral oil for frying (I used grapeseed)
- For the Cilantro Lime Dipping Sauce
- 3/4 cup plain organic yogurt
- 1/4 cup cilantro, diced
- 1 large clove of garlic, minced
- 1/2 tsp ground cumin
- juice from 1 lime
- 1/4 tsp honey
- dash of salt
Preparation
- Whisk together all the ingredients for the dipping sauce and set aside.
- Combine all the ingredients for the fritters (except the oil) in a food processor or high speed blender (I used my vitamix) Pulse until slightly smooth but still a little clumpy. You can also do this in a bowl with the back of a fork. It just takes longer!
- Heat a large frying pan over medium high heat. Add a few tablespoons of oil. Form about 6 small patties with the bean mixture. Dust each side of the patties with a little more of the bread crumbs (this will get the patties a little crispier!)
- Cook patties for about 5-7 minutes per side or until golden brown and crisp.
- Serve with dipping sauce on the side.
Notes
Use this recipe as a guide. Adjust measurements and ingredients as necessary. Always taste test as you go!

Fresh corn is one of of my favorites and I’ve been slacking on eating it, thinking there was so much summer left. These fritters sound great! Hope there’s still time for ears of corn, or I guess I can go frozen. I’m a pumpkin beer lover, too — it’s my favorite beer season!
