I don’t know about you all, but in the summertime I am ALL about the morning smoothies. Who the heck wants a hot breakfast when it’s 7 a.m. and already 80 degrees outside? Not to mention I’m to lazy to chew “real” food early in the morning.

Contrary to popular belief, not all farmers wake up to coffee, eggs, and bacon every morning. Okay, you got me. Coffee is mandatory. The rest is just too much work!

The three of us usually fuel up on a smoothie of some sort (and coffee!) and head up to the farm.

Since farming and and heat stroke go hand in hand during the month of August this tasty little number is the best way to deal with it.

Our morning smoothies usually consist of kale, blueberries, and almond butter. However, this was a fun way to use up some avocados and frozen pineapple. Besides, we have a TON of cilantro at the farm and it was a nice addition. This smoothie was just as tasty as a summer cocktail. Drink up!

Pineapple-Avocado Smoothie With Cilantro

Prep Time: 5 mins.    Cook Time: 0 mins.    Serves: 1

  • 1/2 of an avocado
  • 1/2 of a banana
  • 1/2 cup frozen pineapple
  • 1 cup coconut water
  • 1/4 cup minced cilantro
  • 1 TBS lime juice

Preparation

  1. Place all ingredients into a high speed blender and whirl away!

Use this recipe as guide and adjust ingredients as necessary.

    Wow that smoothie sounds refreshing. A great summertime fix for the weekend. What about dipping? All farmers do that right 😛

  2. Can’t blame you for not wanting a piping hot breakfast in such a heat wave. This smoothie looks like the way to go! Although I am usually too lazy to even make smoothies – forget eggs and bacon!

  3. This looks so thick and creamy, just how I like my smoothies! I would have never thought to add cilantro to mine though!
