Sometimes my favorite recipes really aren’t recipes at all. This garlicky swiss chard toast is a good example of what I love to make for lunch when I am in a pinch for time. Honestly, if I could eat all of my meals on a piece of toast I would be a happy girl.  This is my favorite lunch creation in between harvesting for markets and running around town doing our vegetable deliveries.

The highlight of this particular toast creation is the garlicky chard!

I don’t normally blog about what I eat for lunch, but this recipe (or non recipe) is the perfect example of what I eat around noon almost every day. It never gets old!

Not only is it easy to whip up but it is loaded with protein. Chard, avocado, and eggs really go well together.  Feel free to play around with different toppings. I sometimes add a tomato or onion. The highlight is the garlicky chard though! Dig in.

Garlicky Swiss Chard and Egg Toast

Prep Time: 5 mins.    Cook Time: 10 mins.    Serves: 2

  • 2 eggs
  • 2 slices of your favorite bread
  • 1 small avocado
  • 1 bunch of swiss chard, tough stems removed and chopped
  • 4 cloves of garlic, minced
  • 1 TBS coconut oil
  • pinch of crushed red pepper flakes
  • salt and pepper to taste

Preparation

  1. In a large skillet heat coconut oil over medium high heat. Add garlic and sauté for about 3 minutes stirring often. Add the chopped chard and cook until chard is bright green and slightly wilted. About 3-5 minutes. Stir often.
  2. Meanwhile poach your eggs and toast your bread
  3. Once toast is ready spread avocado evenly over each slice of bread. Top with the swiss chard. Place poached egg onto each piece of toast and season to taste with salt and pepper. Enjoy

Use this recipe as a guide. Adjust measurements and ingredients as necessary.

  1. If you could just whip up one of these for lunch and deliver it to me, that would be great! Garlicky greens are a favorite of mine, too. This looks perfect for the chilly & overcast weather we’re experiencing right now!

    I would eat this for lunch and/or dinner every day! I am such a sucker for a runny yolk plus greens.

  3. So, no judgement zone, right? … I don’t think I’ve ever tried swiss chard. That toast looks amazing though, so I think I’m going to have to remedy this, ASAP.

    This looks awesome! I always do poached eggs w/ avocado toast…or poached eggs w/ greens on toast but never thought to combine avocados AND greens. Amazing!

    I most definitely agree the best recipes are not recipes at all. Throwing delicious things together’s where its at. This toast’s where it’s at! Love the chard, egg and avocado combination!
