Did You Say Beets?

Alright, here is the truth….my mother never fed me beets.  I actually never recall eating beets until I worked on the farm.  This is an embarrassing confession I admit, however, I think I may be redeemed.  Tonight I went there….totally went there!  If you are not a beet person, I may have a cure.  Here is the medicine……..Beet pizza with goat cheese and shallots. Yes, this is your prescription. Here is what you need to do…Follow Doctor Andrea and you will feel like a new person!

First, we had to harvest at the farm.  For everyone who does not work for a farm, please go to your local farmers market to purchase your essentials.  This is a must! Farm fresh beets are necessary!

Yours truly driving to harvest some beets.  I think my biceps are getting stronger!  Forget yoga and Pilates everyone, FARM, and you will be strong!

Alright, now that you have your beets, you need to grab a shallot, olive oil,  and some goat cheese.  When you have completed your field trip to the store you are ready to rock and roll! Wait, I almost forgot, lettuce for a salad! This is not necessary, but for the healthier people out there, you should grab some lettuce.

Alright, here is the recipe for tonight’s dinner. Farm fresh beet pizza with goat cheese and shallots. With a side of farm fresh salad with tomatoes, beets, and more goat cheese (yes, I had leftovers, and this works! There is no way anyone can overload with goat cheese and beets. I promise!)

Try this!  It was so good and easy!

Here is the recipe:

Pre-made pizza dough (or fresh if you make it yourself)

About 5 good sized beets with leaves intact

1 shallot minced

A lot of goat cheese ( I don’t measure,so I guess a whole small log of goat cheese is accurate)

Some Olive Oil

Here is what I did…Roasted the beets at about 375 for 45 minutes.

While that was going on I sautéed the shallot in some olive oil until it was browned.  I then added the beet greens (stems removed) and sautéed for maybe 5 minutes?  Wait until the greens begin to wilt.

I then rolled out the dough (we had store-bought from Trader Joe’s) and sprinkled olive oil on the dough.  Then layered the beets, shallots, greens, and crumbled goat cheese on-top.  I baked for about 10 minutes and that was it!!!! It turned out wonderfully!

    I cannot believe the liz didn’t feed you beets! But what if I don’t like goat cheese? Is there a Rx for that?

      you should try this with parm cheese instead of goat cheese.

      I know, can you believe lizzy never fed me beets??!!!

    Okay so i was busy exposing you to some of life’s other forms of nourishment like wonderful literature, Lieberg Day, music , outdoor adventures, etc. It always comes back to the mom. Also any good parent worth his/her salt ( and you know i love salt) must allow the child to discover. So glad you discovered beets because i hadn’t at your age. i love them too but haven’t thought about on a pizza. We’ll try this on your dad’s new Green Egg.
