Beef & Beet Patties with Spinach Avocado Pesto
We’re here with another CSA recipe of the week. These beef & beet patties are AWESOME! Seriously y’all need to make these. The patties are jam packed with flavor and boosted nutrition thanks to the beets and beet greens. The spinach avocado pesto is so creamy and delicious and I think this may be a new go-to pesto for me this spring while I wait for our basil to mature.
Again, this is a recipe that is loved by toddlers and adults alike. My kids loved the patties but were skeptical of the pesto so they just dipped their patties in yogurt. Either way I call it a win! I hope you and your family love this recipe as much as we do. We served our patties with a simple salad with roasted beets and a side of sauerkraut.
Beef & Beet Patties with Spinach Avocado Pesto
Prep Time: 25 minutes Cook Time: 20 minutes Serves: 10 patties
Spinach-Avocado Pesto- 3 cups loosely packed chopped spinach
- 2 cloves of garlic or green garlic stalks, chopped
- 1/3 cup freshly grated parmesan cheese
- 3/4 teaspoon unrefined salt
- 1 large ripe avocado
- 1/4 cup extra virgin olive oil
- 2 Tablespoons lemon juice
- water to thin if desired
- 1 pound ground beef
- 1 cup shredded raw beets
- 1 cup loosely packed minced beet greens
- 1/4 cup freshly grated parmesan cheese
- 2 cloves of garlic or green garlic, minced
- 1/2 teaspoon onion powder
- 1 teaspoon unrefined salt
- 1 egg, whisked
Preparation
- Preheat the oven to 400F.
- Prepare the pesto by combining all the ingredients in a blender or food processor and blending until smooth and creamy. Taste for seasonings and adjust if needed. Add water to thin if you like a thinner consistency (though I think this pesto is better on the thicker side).
- In a large bowl combine all the ingredeints for the patties together. Using your hands form them into uniform size patties--we got about 12 patties. Place them on a baking sheet and bake in the oven until cooked through, about 20 minutes.
- Serve with the pesto and enjoy!
