I’m not sure that there will ever come a day when farming doesn’t feel magical to me. We stress, we cry, we laugh, we dance, we dig, we sweat, we cross fingers, we cross toes, we pray to our three gods (dirt, sun and rain) and just when we begin to feel doubtful something amazing always seems to happen.

I still get giddy every time our seedlings germinate or our transplants begin to flourish in the fields.  There really is no better feeling in the world.

Taylor and I high five each other multiple times a day at Tumbleweed Farm. The high fives usually happen once we realize something we thought was a lost cause begins to make a come back. With the last little bit of energy we can summon we sometimes follow our high fives with a couple of fist pumps.

One thing farming has taught me is that you are NEVER the boss. Just when you think you know everything nature throws you a curve ball and you realize you are not in control. Weather, pests, disease, weeds, wind and god knows how many other things out there are waiting to knock you down.

This first year branching out on our own has been WAY more challenging than we could have ever imagined. However, we are learning so much about farming, patience, joy, and love. I may break down in tears multiple times a week but I can honestly say I wouldn’t change a thing. Taylor always reminds me that the good times are never quite as sweet if you haven’t experienced a lot of shit along the way. My husband is a wise man.

Obviously, Henry is sympathetic! (FYI, we tie Henry up to a tree when the irrigation is running because he likes to chase the water!)

Between high fives, meltdowns, and complete chaos we somehow managed to eat a delicious lunch today. This sandwich is so stinking tasty and easy to whip up that I wouldn’t even consider this a recipe. All you need is an avocado, a can of chickpeas and a few slices of bread. Doctor this puppy up however you’d like but this is our version. Dig in!

For two servings:

4 slices of your favorite bread (Dave’s Killer Bread for us)

1 cup cooked chickpeas, drained and rinsed

1 ripe avocado

1 TBS lime Juice

1 small jalapeno pepper, seeded and diced

a small handful of chopped cilantro

1 tsp Sriracha hot sauce

Salt and pepper to taste

In a large bowl mash all ingredients together with a potato masher or the back of a fork.

Spread mixture onto bread and top with tomato, spinach, and a drizzle of olive oil. Enjoy!

  4. Other than a really yucky vegan tuna sandwich, I’ve never tried to make a sandwich with chickpeas. While the horribleness of that sandwich scarred me, I think you might’ve given me faith in chickpeas again– this looks GREAT!

    Looks like a great sandwich that would also be a great salad if you made your bread into croutons.

    I just finished a turkey sandwich with your lemon tahini dressing on the avocado. Yummy. That red cabbage and quinoa salad with the same dressing is really wonderful. I was out of chickpeas so threw in some black beans which worked out fine. Now I have to search your archives for your black bean burger to finish up the beans.

    Glad to know things are working out well at Tumbleweed. You three are up for the challenge.

    You are so wise to keep Henry leashed to a tree. Remember that awful panic you had a couple years ago, when Henry playfully ran away? You were crying and scared that he was lost for good. With everything you’ve had to deal with on Tumbleweed Farm, the last thing you need is an errant Henry! Just sit back & relax, Henry – You handsome dawg!

    Loved this recipe! I used gaucamole instead of the avocado mixture to cut down on prep time and make this a quick lunch at work. Delicious and healthy! 🙂
