Beef & Blackened Zucchini Tacos

Zucchini season is officially here. Are you scared? Yeah, me too. We’ve got thousands of pounds of zucchini ahead of us in the field which means we’ll be eating a LOT of zucchini in the coming months. It’s exciting and overwhelming all at the same time. Luckily, working on the farm with a crew of other creative foodies makes coming up with zucchini recipes fun and inspiring. The other day everyone was craving tacos and with the zucchini harvest in full swing the idea for these tacos was born. The result is nothing short of delicious and I hope you all love these beef and blackened zucchini tacos as much as we do. Serve them with your favorite taco toppings and viola! You’ve got yourself a new favorite summer taco recipe.

 

Beef & Blackened Zucchini Tacos

Prep Time: 15 minutes    Cook Time: 25 minutes    Serves: 4-6

Tacos
  • 3 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon unrefined salt
  • 2 Tablespoons melted ghee or olive oil, divided
  • 2 medium sized zucchini, cut into 1/2 inch round discs
  • 1 medium onion, finely chopped
  • 1 pound ground beef
  • 8 tortillas (we love the grain free tortillas from Coyotas)
  • shredded cheese for serving
  • sour cream for serving
  • lime wedges for serving

Preparation

  1. In a small bowl combine the chili powder, cumin and salt.
  2. Heat 1 Tablespoon of the ghee in a large cast iron skillet over medium-high heat. Add the zucchini in a single layer and then sprinkle with about 1/4 of the spice mixture. Cook until golden on the bottom, about 4 minutes. Flip the zucchini and then sprinkle another 1/4 of the spice mixture. Cook for about 3 minutes longer. Remove the zucchini to a plate.
  3. Add the remaining ghee to the pan. Add the onion and cook, stirring often until softened. About 3 minutes. Add the ground beef and the remaining spice mixture. Cook, using a wooden spoon to break up the meat until the beef is no longer pink and cooked through. About 5-8 minutes.
  4. Heat your tortillas however you'd like.
  5. Serve the tacos with the beef and zucchini and all of your favorite toppings.
