Simple Carrot & Cilantro Salad with Cumin-Lime Dressing
This salad is just what my body craves in the hot summer months. It’s bursting with flavor, contains minimal (but high quality) ingredients, and can be enjoyed served alongside many other foods. I love how crunchy it is and even better, it lasts for a few days in the fridge so this is great meal prep for the week. I’ve been loving this for quick farm lunches served with a side of sardines on the side (don’t knock it!) and it fuels me up and keeps me going in the field. I hope this nourishing salad becomes a staple for you this summer as well because our bodies need us to feel good and keep chugging along during these hot months.

Simple Carrot & Cilantro Salad with Cumin-Lime Dressing
Prep Time: 15 minutes Cook Time: 0 minutes Serves: 2-4
- 1 pound carrots, coarsely grated or cut into thin matchsticks, (about 4 cups total)
- 1 small avocado, cut into small chunks
- 1/4 cup toasted sunflower seeds
- 1/2 cup minced cilantro
- 1/4 cup extra virgin olive oil
- 2 tablespoons lime juice
- 2 teaspoons honey
- 1 teaspoon ground cumin
- fat pinch of salt
Preparation
- Combine the carrots, cilantro, avocado and toasted seeds in a bowl.
- Combine all the dressing ingredients in a mason jar and whisk or shake until combined. Drizzle the dressing over the salad and enjoy.
