Simple Beef & Broccoli Stir Fry

This beef and broccoli skillet meal is a simple weeknight dinner the whole family will love. And bonus, it all cooks in one pan! Our broccoli at the farm is finally harvestable after what has felt like a long spring sitting in the ground. The crowns have finally bulked up and they look absolutely beautiful. We picked 160 crowns of broccoli today for our CSA members and reserved a few just for our family. My kiddos loved this meal almost as much as me and my husband.

Beef & Broccoli Stir Fry

Prep Time: 15 minutes    Cook Time: 20 minutes    Serves: 4

  • 1 Tablespoon ghee or beef tallow
  • 4 cups broccoli florets
  • 1 small yellow onion, sliced
  • 1 Tablespoon ghee or tallow
  • 1 Pound  Ground Beef
  • 1 1/2 cups beef broth
  • 1/4 cup coconut aminos 
  • 1/2 teaspoon unrefined salt
  • 1 Tablespoon maple syrup
  • 3 cloves garlicminced, 
  • 2 teaspoons grated ginger
  • 1 teaspoon red pepper flakes
  • 2 Tablespoons arrowroot powder
  • 2 Tablespoons cold water
  • handful of minced cilantro for serving
  • cooked white rice for serving
  • salt and pepper to taste

Preparation

  1. Heat the ghee or tallow in a large skillet over medium high heat. Add the broccoli and onion and cook, stirring occasionally, until the onions are tender and the broccoli is bright green, about 8 minutes. Remove from the pan and set aside in a large bowl. Add the beef to the same skillet and use a wooden spoon to break up the meat a bit. Cook, stirring often until the beef is cooked through and no longer pink.
  2. Stir all sauce ingredients together in a measuring cup (beef broth, coconut aminos, maple syrup garlic, ginger, and red pepper flakes). Whisk until combined. Stir the arrowroot into the cold water to form a slurry and set aside.
  3. Return the broccoli and onions to the skillet with the beef. Add the sauce ingredients and pour in the arrowroot slurry. Give everything a good stir. Bring to a simmer, reduce the heat to low and simmer until the sauce has thickened. About 5 minutes. Season the sauce with addition salt and pepper to taste.
  4. Serve over rice with minced cilantro
