Spicy Miso Chicken, Turnip & Kale Stir Fry

This simple, CSA-friendly chicken stir-fry is proof that healthy, seasonal cooking doesn’t have to be complicated. It’s packed with fresh salad turnips, tender kale, cilantro, green onions, garlic, ginger, and onion, all tossed with juicy chicken in a savory, umami-rich miso sauce. It comes together in just 25 minutes, making it an easy weeknight dinner when you want something nourishing, flavorful, and loaded with farm-fresh veggies. It’s a great way to use up whatever is overflowing from your CSA box, too!

Ingredients

Miso Sauce

  • 1-inch knob fresh ginger, freshly grated

  • 4 green onions, thinly sliced, white and pale green parts only

  • 1 teaspoon toasted sesame oil

  • 2 tablespoons white miso paste

  • 1 tablespoon sriracha, or more to taste

  • 3 tablespoons coconut aminos

  • 1 Tablespoon water

Chicken and Veggie Stir Fry

  • 1 Tablespoon olive oil or avocado oil

  • 1 small yellow onion, diced

  • 2 cloves of garlic, minced

  • 1/2 teaspoon crushed red pepper flakes

  • 1 1/2 pounds ground chicken

  • 1 heaping cup shredded turnips

  • 2 cups shredded/finely chopped kale

  • 1 cup finely chopped cilantro

  • 1/2 cup finely chopped cashews

  • 2 cups cooked rice for serving

Preparation

  1. Prepare the sauce by blending all the ingredients together until smooth. Set aside.

  2. Heat the oil in a large cast iron pan over medium-high heat. Add the chopped onion and cook, stirring often until soft, about 5 minutes. Add in the garlic and pepper flakes and cook for about 1 minute longer. Stir in the chicken and use a wooden spoon to break up the meat a bit. Once the chicken is browning, add the shredded turnips and kale. Cook for about 4 minutes longer. Pour in the sauce and simmer until everything is cooked through.

  3. Divide cooked rice between plates, top with the chicken/veggie mixture and add the cilantro and cashews.
