Beef & Beet Bowls with Whipped Cottage Cheese & Hot Honey

Serves: 4

Ingredients

1 bunch of beets, chopped into small cubes (1 cup of the beet greens finely chopped--save any extra beet greens for another use)

1 tablespoon olive oil or avocado oil

1 pound ground beef

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1 teaspoon salt

1 cup finely chopped kale

1 cup cottage cheese, blended until creamy

1 avocado, chopped

4 teaspoons hot honey

flakey sea salt

crushed red pepper flakes (optional)

Preparation

Preheat the oven to 425F. Toss the beets in olive oil or avocado oil and sprinkle with a generous amount of salt and pepper. Place on a rimmed baking sheet and bake in the oven for 20-25 minutes or until fork tender.

Meanwhile add the ground beef to a large bowl. Mix in the spices, (chili powder through salt). Heat a large cast iron skillet over medium-high heat. Drizzle in a little olive oil and then add your beef mixture. Cook, breaking up the meat with a wooden spoon until the meat is cooked through, about 5 minutes. Push the meat over to one side of the pan and then drizzle in a little more oil. Add the beet greens and kale and sauté until the greens are wilted and turn bright green. Then use your wooden spoon to mix the greens and beef mixture all together.

Divide the beets between 4 bowls and then add the ground beef, a spoonful of the whipped cottage cheese and avocado. Drizzle the whole thing with hot honey and sprinkle with sea salt and crushed red pepper flakes if desired.
