Lemon-Thyme Blueberry Smoothie
It is so damn hot here that we’ve contemplated farming naked. Seriously.
The weather forecast doesn’t look promising. I cried after seeing there is a possibility of triple digits in the next few days. I even threatened Taylor that I was quitting the farm life so I could work in an office with air conditioning. Extreme heat, paired with a jam-packed harvest and seeding schedule is a toxic combination.
This smoothie recipe is the only positive thing I have to share with you today. You can blame the heat stroke! This tasty treat is refreshing and in our case-a true life savor.
We traded veggies at the farmers market for a ton of organic blueberries. They are so stinking good that we’ve eaten most of them straight out of pints. However, I knew I wanted to freeze a few to toss into a smoothie and this recipe is a new favorite. Don’t let the addition of fresh thyme scare you. I’ve been a huge fan of throwing fresh herbs into sweet things recently and this flavor combination works really well.
If you’re suffering from heat exhaustion I’ve got the perfect remedy. Grab a straw and enjoy this refreshing treat. Cheers.
Lemon-Thyme Blueberry Smoothie
Prep Time: 5 mins. Cook Time: 0 mins. Serves: 2
- 1 banana
- 1 cup frozen blueberries
- 1/2 a lemon, juiced
- 2 teaspoons fresh lemon zest
- 1/8 teaspoon fresh thyme, minced
- 1 Tablespoon honey
- 1 Tablespoon chia seeds
- 1 1/2 cups unsweetened almond milk (homemade preferred)
Preparation
- Place all ingredients into a high speed blender and whirl away.

It’s chilly here where I live at the moment, wish we could split the difference and make both of us more comfortable! These smoothies look delicious, and I love the addition of thyme. It works so perfectly with the lemon and blueberries.

I’m sorry you’ve had to suffer in the heat lately. It’s weird that y’all are north of us and it’s hotter there than it is here.

We just headed back to Seattle today after a hot week in Parkdale. We weren’t farming and we were still roasting so I can only imagine your plight! It’s going to be in the 90s in Seattle this week, so this smoothie is going in the blender tomorrow!
