Lemon Poppy Seed Smoothies
It was a rather dramatic 24 hours at the farm. Our neighbors horses hopped the fence and trampled around our field killing a lot of crops- a few hungry deer paid a visit- Henry had a run in with one of our chickens and broke her leg- and Taylor and I spent the past 13 hours hunched over the dirt fixing the damage. To sum it all up, it was not the most enjoyable day of the season.
A few tears were shed (and yes, I called my mom!) But life goes on and the damage could have been WAY worse. Nothing like a couple of crying farmers to kickstart a Monday morning. The good news is that our little chicken (Moose) is going to be okay. Henry chased her, grabbed her and immediately let go. Unfortunately, her leg is really hurt but we are confident she will be okay.
Times like these call for powerful smoothies to keep us energized and feeling strong so we can overcome the unexpected.
The inspiration for this smoothie comes from my raw lemon poppyseed bites. We love those little snacks so much that I thought it would be fun to use the same flavor combination in a smoothie. The result was nothing short of amazing (Taylor said this was his favorite smoothie to date) and we will definitely be making these more often.
We may have started our morning off with tears and smoothies but we ended the long day with a couple of beers and a full hour spent sitting in the dirt doing absolutely nothing. It was amazing and just what the doctor ordered.
What I've learned over the past 5 years of farming is that there is always going to be drama. Our boss is mother nature and sometimes she can be totally unfair. As long as we keep a positive attitude and don't get wrapped up in all the things that are going wrong we can focus on all the wonderful things that are going right. As it turns out, more things are going right than wrong and I think our future is looking bright.
Moral of the story- when life gives you lemons, make lemon poppy seed smoothies. You can thank me later! Grab a straw.
Lemon Poppy Seed Smoothie
Ingredients
- 1 medium-sized banana
- juice from 1/2 a lemon + 1 Tablespoon lemon zest
- 1 1/2 cups unsweetened almond milk (homemade preferred but store bought is fine)
- 1 Tablespoon Almond Butter
- 3 large dates, chopped (if you don't have a high speed blender sub 1 1/2 Tablespoons pure maple syrup or soak your dates for at least 30 minutes prior)
- 1 1/2 teaspoons poppy seeds
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- small pinch of fine sea salt
- a couple of ice cubes
Preparation
- Place all ingredients into a high speed blender and whirl away until smooth. Taste test and add more lemon or sweetener if necessary.
