Grilled Steak with Green Sauce & Simple Radish Salad

We had a very successful farmers market last weekend and sold out of almost everything. It was the best one of the season for us and we knew we needed to celebrate with a tasty meal. One of the things we like to prepare when we’re celebrating any occasion is a good old fashioned steak! I don’t know if I get this from my parents (or probably, if I’m being accurate, my grandparents) but all of life’s major milestones (whether big or small) are usually celebrated with steak. It goes back as far as I can remember whether it was my grandmother’s famous flank steak recipe or my folk’s traditional grilled steak and baked potatoes. Anything worth celebrating was an excuse to fire up the grill or crank up the oven.

This recipe is packed full of flavor and while there are a few steps in the prep work–making the spice rub and green sauce–this does come together fairly quickly. I really loved the green sauce which was a combination of radish greens, parsley and cilantro. It’s a great sauce and would work well with other meats and even stirred into pasta. The spice rub we whipped up was also a lovely addition and I know I’ll be making this again soon. We served our steaks with the simple radish salad from a few days ago for a tasty celebratory meal. Of course there were a few glasses of un-pictured wine to tie it all together. I hope you all enjoy this meal as much as we do.

Grilled Steak with Green Sauce & Simple Radish Salad

Prep Time: 25 minutes (not including bringing the steak to room temperature)    Cook Time: 10 minutes    Serves: 4

Steaks
  • 4 bone-in Rib Eye steaks (about 1 pound each and about 1 inch thick)
  • olive oil
Spice Rub
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 3 teaspoons kosher salt
  • 1 1/2 teaspoons chipotle chili powder
  • 1 teaspoon ground black pepper
Green Sauce
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoons lemon juice
  • 2 cloves of garlic, chopped
  • 1 small shallot, chopped
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped parsley
  • 1 cup chopped radish greens (if the greens seem old or tough substitute with more parsley and cilantro)
  • 1/2 cup chopped cilantro

Preparation

  1. Remove the steak from the fridge and bring to room temperature 1 hour before grilling.
  2. Prepare the spice rub by combining all the ingredients in a small bowl.
  3. Place all the ingredients for the green sauce in a blender or food processor and process until smooth. Taste for seasonings and adjust as needed.
  4. Prepare the bbq for high heat. Pat the steaks dry with paper towels and brush them with a little oil. Rub the steaks all over with the spice mixture and place on the preheated grill. Grill for about 4 minutes per side (for medium rare).
  5. Serve the steaks with the green sauce and radish salad.

    Your green sauce sounds kind of like a chimichurri sauce that is served in Argentina with their grilled beef. Delicious!
