Cardamom Spiced Granola Parfait
We’ve been hitting the eggs pretty hard recently so I thought I’d switch up our morning routine a bit with this really tasty cardamom granola. I used to be way better about having granola on hand at the farm and after whipping up this batch I’m back on the granola train. There’s actually another batch baking in the oven as I type this and the house smells amazing! Homemade granola simply can’t be beat and this version is wonderful. This is the kind of breakfast that can easily be enjoyed as a mid afternoon snack or even dessert. We served the granola with some full fat plain yogurt and a drizzle of maple syrup and it is absolutely lovely. I hope you all enjoy these parfaits as much as we do. Pour a cup of coffee and enjoy!

Cardamom Spiced Granola Parfait
Prep Time: 10 minutes Cook Time: 20 minutes Serves: 7 1/2 cups
Granola- 3 cups old fashioned rolled oats
- 1 cup pecans, roughly chopped
- 1/3 cup pumpkin seeds
- 1/3 cup flaxseeds
- 1/4 teaspoon salt
- 2 teaspoons ground cardamom
- 2 teaspoons pure vanilla extract
- 1/2 cup pure maple syrup
- 1/3 cup olive oil
- Full fat plain yogurt
- Maple syrup
Preparation
- Preheat the oven to 325F. Line two baking sheets with parchment paper.
- In a bowl toss the oats, nuts, seeds, salt and cardamom. Drizzle in the vanilla, maple syrup and oil. Mix well. Spread the mixture in a single layer onto two baking sheets. Bake for 20-25 minutes. Stirring the granola halfway through baking. Keep a close eye on the granola after 20 minutes as it can easily burn.
- Serve with plain yogurt and a drizzle of maple syrup for a simple breakfast.

This looks great, I am not a big breakfast eater so some thing like this works great for me. I do have one question, what does cardamom taste like? I don’t think I have ever had it before. … Tracy

This is such a pretty picture. Love the moodiness of the shadows. I too am out of the habit of making granola, but this is inspiring me to make a batch.
I’m not a huge of pecans. What could I use instead?
