Arugula Hummus

Arugula is one of my all time favorite greens and this recipe lets you enjoy it in a whole new way! Not only is arugula delicious with a light peppery bite, but it’s high in vitamin C and magnesium with anti–inflammatory and detoxifying properties. It’s a great way to up your hummus game with a delicious flavor and beautiful green hue. This is a lovely protein rich snack that tastes great with crackers, veggies or spread onto a sandwich.

Arugula Hummus

Prep Time: 10 minutes    Cook Time: 0 minutes    Serves: 8

  • 1 1/2 cups cooked chickpeas (if from the can drained)
  • 2 cups arugula
  • 1 clove of garlic, minced
  • 1/4 tahini
  • 2 Tablespoons extra virgin olive oil
  • juice of 1/2 a lemon
  • 1/4 teaspoon crushed red pepper flakes
  • 4 Tablespoons cold water
  • plenty of salt and pepper to taste

Preparation

  1. Place all the ingredients into a high speed blender or food processor and whirl away until smooth. Taste test and adjust seasonings as needed. Add more water to thin if desired.

Use this recipe as a guide and adjust measurements and ingredients as necessary.
